This winter our “Chefs in Training” (“CITs”, as our students call themselves) have been planting, growing, harvesting and creating delectable salads out of our crunchy romaine, red leaf lettuce, peas and broccoli harvested from our garden. With parents’ additional weekly food donations, we have been able to create exotic salads by adding sliced Bosc pears, dried cherries, croutons and parmesan cheese to base ingredients from the garden.
Many parents are amazed that their child, who normally would never touch a vegetable, can’t get enough of the salad that they have grown and prepared into a delicious nutritional dish! We are also learning the art of cooking and baking. We have created cornbread topped with our own homemade butter, blended up healthful smoothies, and simmered and sipped sumptuous soups.
